Salt Pork and Vegetable Soup

2 tbsp (25 ml) butter

1 small onion, chopped

1/2 lb (.25 kg) salt pork, diced

1/2 tsp (2 ml) each, thyme and parsley

1/4 tsp (1 ml) oregano

2 each, tomatoes, carrot and celery stalks, diced

4 cups (1 L) water

1/2 cup (125 ml) whipping cream

Salt and pepper

Cooking Instructions:

Sauté onion and salt pork in butter until translucent. Add all remaining ingredients except whipping cream, bring to boil. Reduce heat and simmer, covered, until vegetables are tender. Stir cream into soup, do no let boil. Adjust seasoning and serve.
